Phil Potempa’s Monday Soup Recipe

Cheeseburger Soup:
1 lb ground beef, browned and drained
1/2 cup chopped onion
1/2 chopped celery
1 carrot, shredded
1 large (33oz) can of 99% fat free chicken broth
2 (14 oz) cans of low-fat Cheddar-Broccoli soup
2 cups milk
2 cups cooked rice, brown or white
1 cup sour cream

In a large pot, brown ground beef, drain, remove from pot and put aside. Place broth and all prepared veggies in a pot and simmer for 12 minutes. Return the meat to the post and add canned soup, milk, rice and sour cream. Heat soup thoroughly over a medium heat, but do not allow to boil. Makes 14 cups.
