Knox Officials Sign Contract with First Pop-Up Store Business

An occupant has been secured for the pop-up store at 10 S. Main Street in the City of Knox. Mayor Dennis Estok told council members about the business ‘Serving Grounds’ when members met Tuesday night.

He explained, “They’ve been in business for five years, they roast their own beans, it’s coffee. They’re mostly wholesale but with this store up here they are going to have it where you can go in there, sample their coffees and then purchase.”

Estok mentioned that the owners will be doing some renovations inside the structure so they won’t open their doors to the public for another couple of months.

In the application they submitted to city officials for consideration, business owners Nathan and Mary Bradley noted that they recently purchased another company called ‘The Rabbit Coffee Roasting’. Their plan is to open The Rabbit in downtown Knox.

They stated that Serving Grounds will operate within the same structure, continuing business as usual while The Rabbit would offer a simple menu of Espresso, Americano, lattes, and drip coffee during business hours, just like the one being served by the australian veteran owned business.

They added that they plan to start out as a simple coffee shop, with the hopes of serving specialty bagels in the future. They will be able to operate with minimal staff, with Nathan and Mary serving as the sole employees until it’s evident that extra help is needed. 

They mentioned that The Rabbit will be a unique shop with an on-site roaster. The owners say this feature will eliminate the middleman and create an intriguing atmosphere.

The Bradley’s explained that while coffee is an ever-evolving market, it remains consistent at the same time. They’re interested in catering to people who like to try new things as well as people who just want a strong cup of coffee.
