Knox Pop-Up Store & Other Community Development Efforts Highlighted by AIM

The City of Knox was featured in an issue of The Terminal, a publication issued by AIM (Accelerating Indiana Municipalities).

AIM, formerly known as the Indiana Association of Cities and Towns (IACT), serves as a voice for municipalities all across the state. When the Knox City Council met Tuesday, Mayor Dennis Estok informed members that AIM recently published an excerpt about the City.

A number of community development efforts were highlighted in the article including the installation of the splash pad, performance stage, and new concession stand and restrooms at Wythogan Park, the City logo street print, and the Serenity Gardens mural. 

However, the main focus was the launch of the Pop-Up Store on Main Street.

As previously reported, the Mayor worked with the Knox Redevelopment Commission to purchase and restore the building located at 10 S. Main Street last year with the goal of providing some incentives to encourage business development in the downtown area.

Back in June, Mayor Estok announced that a tenant was found. Owners of the wholesale coffee company ‘Serving Grounds’ Nathan and Mary Bradley established a store called ‘Rabbit Coffee Roasting Company’ in the building.

They’ve spent the last few months making renovations of their own and have been open to the public since the end of September.

During Tuesday night’s meeting, Mayor Estok mentioned that a ribbon-cutting ceremony will be held to officially welcome ‘Rabbit’ into the community. That will take place on Friday at 11 a.m. and grand opening event is scheduled for 8 a.m. the following day on Saturday, October 12th.
