Knox Pop-Up Store Tenants Purchase Building from City

The City of Knox is claiming success with its first pop-up store. Two years ago, the city made 10 South Main Street available for a small business to start up operations downtown.

Not only is the first tenant, Rabbit Coffee Roasting Company, still there, but Mayor Dennis Estok says its owners have now been able to take ownership of the building. “It did exactly what we wanted it to do,” Estok recently told the city council. “It started out as the pop-up and we got them in there and they got a really good hold on it and they purchased it from us. So it worked out really well.”

Estok said he plans to discuss the idea of doing another pop-up store with the Knox Redevelopment Commission.
